Apple & Chicken Sausage Pasta


Product Highlight- Al Fresco Chicken Sausage (variety of flavors offered)

Al Fresco sausages are sold in bulk at COSTCOS at a great price!

This meal can be prepped and cooked in less that 30 minutes!!

1 pkg. (12 oz.) Al Fresco Sweet Apple Chicken Sausage, sliced
3 Apples (I use Braeburn, but granny smith or any hard apple would be good), skins and cores removed
1 Green Pepper, sliced
1 Fennel Bulb, chopped coarsely
Green Onions, 1 small bunch, greens and whites separated
Boursin Cheese, Light.  5.2 oz package (found int gourmet cheese section of grocery store)
12 oz. Tri-color Rotini, cooked according to package
1 Tbsp. Olive Oil
1 tsp. Fennel seeds (optional)
Salt and Pepper, to taste

While pasta is cooking in a large saucepan, cook sausage slices in a skillet on medium heat adding salt.  After sausage begins to brown, add sliced green onions, white part only and sautee for about 2 minutes.  Add apples and fennel and cook for 2 to 3 minutes.  Add green pepper and cook an additional 2 to 3 minutes.  Add fennel seeds and cook for 1 minute.  Add olive oil and boursin cheese and allow cheese to soften for a minute or two while constantly stirring to blend cheese into mixture.

Drain Pasta and return to pan.  Add sausage mixture to pan and stir together.  Add salt and pepper, to taste.

Add sliced green onions on top of each plate for garnish and serve.

NOTE:  A great way to grease your pans but keep your fat intake down is to pour olive oil on a paper towel and wipe all around the pan before you heat it.
