Egg Salad with an “O”

Makes 2 Large Servings.  (I usually get 4 servings out of this recipe. If you do too, cut the nutrition info in half, of course))

4 hard-cooked eggs, chopped
1/3 cup Hellman’s Reduced Fat Mayonnaise
1 TBSP Thinly sliced Green Onions
1 tsp. Spicy Brown Mustard (or dijon)
salt and pepper to taste

In a bowl, gently mix all ingredients.  Serve on a slice of Whole Grain Bread or on Crackers.  For a lower cholesterol, lower-fat, lower-calorie version, cook 6 eggs, but remove 3 yolks.

Nutrient value per serving (Egg Salad only):

260 calories   10g protein  14g fat   2g carbohydrates   370mg sodium   440 mg cholesterol
