Fake-Fried Rosemary Chicken

Serves 2
Prep Time:  10 minutes
Cook Time: 40 minutes

2 lbs.  Chicken Breast with Bone (remove skin)
1 cup Multi-grain Cheerios, minced/crushed
1 sprig Fresh Rosemary
1 tsp. Onion seasoning blend
salt and pepper to taste
1/2 cup Soy Milk
1 Tbsp. Light Butter, melted
White Wine (or Chicken broth)

Preheat oven to 425.  Spray cooking spray into 9*13 in. pan.  Mince/chop/crush cheerios and place on plate (like breadcrumbs, but slightly more coarse).  Add chopped rosemary and onion seasoning to cheerio-crumbs and mix.  Set aside.  Place soymilk in a large bowl.  Set aside. Dip skinless chicken into soymilk to coat and then dip into cheerios mixture.  Place in pan.  Melt butter in microwave (about 30 seconds) and drizzle onto the chicken.  Place white wine in pan, enough to cover the bottom.  Cover with foil tightly and cook for 30 minutes.  Remove foil and cook an additional 10 minutes.

You now have deliciously juicy chicken!
