Maple Sweet Potato Pancakes (plus a meal)

1 Yam

1 Yukon Gold Potato
1 sm. Onion

1 Tbsp. Maple Syrup

4 Egg Whites

¼ cup flour

Applesauce

Makes 4 servings

This side dish goes nicely with a 3-4 oz piece of baked cod and a side of green beans.  Total Meal (Cod, Pancakes, Applesauce and Green Beans) is:

Heat a pancake grill on medium-high heat (375°).  Shred potato and yam in shredder and mix in bowl.  Chop onion and add to bowl.  Add egg whites, maple syrup and flour to bowl and mix together.  Place large spoonfuls of mix on grill and cook like pancakes, about 3-4 minutes each side. 

Top with ¼ cup of applesauce, per serving.  Adds 30 calories
