Mashed Parmesan and Salsa Ranch Cauliflower


1 Head of Cauliflower

2 Tbsp Salsa Ranch Dressing (I use Bolthouse Farms Yogurt Dressing, only 45 calories)

1/2 cup 1% Low Fat Milk

1/4 cup of Grated Parmesan

Salt & Pepper to taste


1.  Remove cauliflower from head (break apart) and place in boiling water.  Cook until tender. Drain water.

2.  Let cool, slightly, and place in food processor with remaining ingredients.  Puree.  Serve!

This recipe takes 10-15 minutes of mostly idle time, is low-fat, low-cal, and a great way to make a vegetable a hearty side dish!  It’s a low-fat version of Creamed Cauliflower.  Goes great with meat, fish, or simply bread.
