Sassy Tuna Salad

2-3 Tbsp Hellmann’s, Reduced Fat Mayonnaise
1 Can Tuna Fish, drained
1 Carrot, chopped
2 Celery Sticks, chopped
1 Cucumber, medium, peeled and sliced
Balsamic Vinegar
1 tsp. Light Brown Sugar
½ small Red Onion, chopped
¼ cup Craisins, divided

In medium bowl, stir together tuna, mayonnaise, chopped carrot, and celery.  Set aside.  In small saucepan, pour enough vinegar to cover bottom of pan and add brown sugar and onions.  Cook on medium-high heat.  While cooking, slice cucumbers and arrange on a plate (see picture).  Divide tuna mixture into 2 separate balls.  Set aside.  Spoon onions from pan and drizzle over cucumbers.  Place tuna balls on center of cucumbers.  Top each plate with half of the craisins.  Serve immediately.
