After recently cutting out dairy and grains from my life (difficult, but I’m feeling much better), I’ve been forced to eat a lot more fruits and vegetables than I’m used to, which of course is a good thing. Over the past two weeks I’ve been trying out new recipes, especially quick and easy dishes, because […]
Recently, I had one of the most delicious dinners I’ve eaten in a long time, surprisingly at a hotel’s restaurant while attending a conference. It was a vegetarian meal consisting of grilled vegetables on top of grilled ricotta cheese with pesto, a spicy mayonnaise, and a balsamic glaze drizzled over it. I decided to […]
I tried something new…. I bought one of those pre-packaged soup vegetable trays at the supermarket. It came with a turnip (I’ve actually never cooked one before), a giant parsnip, some celery, carrot, and an onion, along with dill and parsley herbs. I’m always looking for new ways to add more vegetables to […]
This is a simple appetizer that is very tasty and light. It is a refreshing change from all the appetizers that are either fried or greasy. This app is baked, not fried.
2 Apples (of your choice), sliced and diced*
1/3 cup shredded cheddar cheese (reduced fat)
Gouda cheese, sliced and diced
1 pkg. WonTon Wrappers
2 Tbsp Butter, melted
Preheat oven to 400 degrees. Take one wrapper and brush it lightly with butter. Place one apple slice in center of wrapper. Sprinkle cheese (or place a slice of Gouda) on top of apple. Place another wonton wrapper on top (like a ravioli). brush sides of wrappers with butter and press down on all four sides so that the edges close (again like a ravioli). Take each of the four corners and fold then into the center of the wonton. Lightly brush, once more, to seal all of the corners to the center. Repeat with remaining wontons. Makes approx. 25 appetizers.
* “Sliced and diced” means to cut slices and then cut them into smaller squares

Not that the store, or company, believe in this diet, afterall most natural food advocates are on the side of a primarily plant-based diet. But this magazine has […]
